How do you cook nettles?

I thought it would be fun to pick some (young) nettles with the dcs and cook them up. But how? Boil them? For how long? And then what? Surely you don't just eat a mouthful of boiled greens? Any ideas? Thank you.

my aunt used to make a delicate soup with nettles, dont know whtat else was in it tho....

You can just cook them like spinach or spring greens - boil or steam them, but only for a few minutes.

They make a nice soup as well. Soften a chopped onion in some butter, add some chopped potato and the nettle leaves and cook gently for a couple of minutes. Add stock and herbs, cook for about 5 minutes. Blend, reheat, and serve with a dollop of yogurt or creme fraiche. It's very nice.

You can just eat them as boiled greens (just cooked in the washing water, as with spinach) but I've done quiche (good) and soup (sadly not so good in my case).
