lamb and rice

Hi,

Have some leg of lamb here and am stuck for ideas. DH has requested rice with something and can only think of using the lamb but what to do with it?
He is probably as bored as I am of lamb casserole or curry. Have been using the same recipe for the two for 6 years now and need some new ideas.
Any please?

Perhaps a new curry recipe and one for some exciting rice? My boiled plain rice is also a bit boring these days. Thanks.

Roast the leg of lamb, half way through add chopped shallots, garlic and mixed mushrooms to the roasting tin after another 20 mins or so add uncooked rice to the tin. The rice absorbes the lamb stock, if there isn't enough liquid add some water or a splash of red wine. Yum
It ends up like a rissoto type thing just chop up lamb and serve on bed of the rice.
