Recipe for vegetarian cobbler????

Want to make a vegetarian cobbler using mushrooms in a thick red wine gravy, not sure how to go about it, any suggestions????

I'd do something like brown the mushrooms in olive oil with some onion and garlic, add a little flour and stir it in, add vegetable stock and wine, throw in something like chickpeas or aduki beans, bubble for a bit to thicken and reduce the stock, then stick it into a casserole dish.

Half butter to flour for the cobbles on the top - rub it in, add a bit of milk to bind, roll into balls and bung it on the top, stick it in the oven for 20 minutes.

Use what you like to suit yourself. Throw in some carrots, celery, parsnips or whatever veg you fancy with the mushrooms. If you wanted to make it a bit more substantial you could use something like lentils, soya mince or Quorn (if you eat meat substitutes) - add it with the stock. You could also use pearl barley, but that takes a bit more cooking and I'd probably cook it separately before adding it with the stock.
