How do you use ginger?

Making some pork chinese balls and it tells me to add fresh ginger. Now, I have fresh ginger but what the hell do I do with it? I tried grating it but I just get a mushy mess, do you just finely chop it or will that be too overpowering?

peel and very finely chop will be fine

Grating it is fine, just add the mush to the recipe. You can also finely dice it.

I freeze mine and grate it straight from the freezer, using the fine side of the grater. I don't bother peeling it.

I just cheat and use the squeezie kind, no fuss or bother and its not too bad better than the vinegary ones on the shelf and it still makes a good stirfry or curry. the squeezie lemongrass is great too no faffing about with lemongrass stalks! yeah I know I'm a lazy cook.
