A hideous amount of cheese

I have been given a huge block of cheedar - mild cheese. 5.5kg Really.

Can i freeze it?
How long should it last?

What can i do with it? I have made tuna cheesy pasta which is very yum but what else?

Am going to make a cheese sauce with it for lasagna

Yes you can freeze it - it changes the texture slightly but it's still OK. Cut it into useable blocks, wrap in cling-film or bag it in freezer bags.

apparently, some people put it in sandwiches. whatever next!!

will i keep for about 6 months and will can i grate it from frozen?

Grate it first and freeze it in ziploc bags and then you can just grab out handfuls when you need them.

I've kept it 6 months in the freezer (don't know if you're supposed to but, hey, I'm not dead yet). I've never tried grating it from frozen but I don't see why you couldn't.

cheese sauce, grated and frozen, cheese straws, cheese scones, etc...

keep them coming i also have huge tubs of spicy green olives and black too.

Too add them together might be a bit odd.
