Is there such a thing as a 'recipe' book that's more 'ideas for assembling quick meals'?

You know the kind of thing: a cod steak baked with tinned tomatoes and peppers, lamb chops marinated in orange juice & redcurrant sauce, salmon fillets sprinkled with Cajun spices ...

Nigella & Nigel Slater are dotted with this kind of thing (and others no doubt), but are there any books or websites full of them? I'm trying to extend my repertoire of 'instant' dinners ...

At the risk of repeating your OP, do you have Nigel's Real Fast Food?

Have you seen the little BBC Good Food 101 books? 101 Simple Suppers and 101 One-Pot Dishes should fit the bill.

there is a magazine which I think is a BBC one called "easy" or something like that which is mostly assemble type dinners - all very straightforward
