DS is 3 this weekend, and is having a party with all his little friends. One is majorly allergic to egg, and I thought it would be good to make an egg free cake that tastes good. Can I find a good recipe??? Noooooo.

Anyone got one they can share?

Thanks!

Hi
Try this chocolate cake.

Sieve
1 3/4 cups flour
6 tsp cocoa powder
1 tsp baking soda

Separately mix
1 cup plain natural yoghurt
3/4 cups refined oil
1 cup sugar

Blend both the mixtures well - it will be thicker than most cake mixes, but don't worry. Pour in a greased aluminium mould, cover with foil and bake at 150 degrees for 40-45 minutes.

I got this recipe from a friend - I usually just bung everything into the food processor, whizz and bake in a pyrex glass bowl - works for me! Served with chocolate sauce (I use store bought, am afraid) and vanilla ice cream, it is bliss!

You can replace eggs in various ways (see coeliac.info/suppboard/viewtopic.php?t=614). For my son's birthday cake I use a standard Delia Smith recipe substituting for the ingredients he is allergic to - for each egg I use one heaped tablespoon cornflour and three tablespoons of water. Although I also have to substitute with gf flour it still produces a very good chocolate cake (though it is denser than normal). If you are only substituting for the egg then yours should be absolutely fine. Holland and Barratt do the commercial egg replacer if you want to try that (it is composed mostly of soya flour).
