V Simple easy peasy cake recipe needed please!!!

It is DS2's 1st birthday tomorrow and I have have promised DS1 (3.5) that he and I will make the birthday cake together.

Don't have a big magi-mix thing, but do have a hand mixer.

Am very successful at curdling things, so it needs to be v.simple, or even better, chuck-these-things-in-a-bowl-and-mix.

Pleeeeeease help loverly ladies....

ooh I am master of chuck everything in a bowl

chocolate sponge

3 eggs
6oz softened butter (make it soft in the microwave first)
5oz self raising flour
1oz cocoa
6oz caster sugar
1 and a half teaspoons baking powder

chuck in bowl all together - mix till all blended then put in 2 7inch tins and shove in oven at 180C for around 20-25 mins (till fork comes out clean). Voila.

make the infamous lemon drizzle cake. it;s soooo easy.
here's what i do:
make the batter as instructed
BUT son't put in the lemon zest.
divide batter in half.
add a couple spoons of cocoa to one
add lemon zest to the other.

then you get a chocolate cake AND a LDC without doing double the work!

if you don't want chocolate, leave out the cocoa, and do 6oz sr flour instead.

Good Morning WaynettaSlob the following is so easy to make I promise you will not have any problems!!

Put oven on to 170 Cream 6ozs of butter/marg and 6ozs of sugar in a bowl until smooth (about 5-10 minutes)add 6ozs of self raising flour, 2 tablespoons of cocoa,(leave cocoa out if you just want a plain sponge) 1.5 teaspoons of baking powder and 3 eggs and mix together until lovely and smooth. It will look really runny do not panic all with be fab soon! Grease and line 2 x 8"/20cm cake tins, pour mixture into them and bake for 40 minutes - but check after 30 minutes and test with a skewer - poke into cake and if it comes out clean it is cooked. When cooled take 4ozs butter/marg and mix with 8ozs of icing sugar and 2 tablespoons of cocoa (again leave out of want a plain sponge) mix until smooth and decorate cake!! Enjoy and your DS1 will adore licking the bowl - best part of cooking in my opinion!! Decorate will all manner of decorations to hand and marvel as DS1 and DS2 will think their mummy is the best in the world!!

that's why you do half and half. LDC for you - chocolate for them! everyone wins!

The kids will love ldc. My kids do and so do all their friends. What's not to love?
