ideas please how to cook chicken breasts

huge breasts (phnarr phnarr) bone in and skin on, not feeling very inventive so can you help me out by telling me how you would cook them please?

can you bone and skin them?

in which case

  1. beat flat and marinade in lime / lemon juice and chilli and grill

  2. slit skin fill with boursin, wrap in bacon, wrap in foil and bake

or keep bone in and make a casseroley thing (mixed root veg/ onion / stock / mushrooms / spicy sausage) and serve with rice

or just grill them and serve with mash and onion gravy

While I was waiting for your ideas I made some potato wedges and coated them in spices and olive oil then put them in the oven to bake.

Have the makings of a salad too.

How about something simple? What if I rubbed them with garlic and fresh herbs and roasted them, would that work?

It's just that I hardly ever buy breasts so I'm not used to thinking of ways to cook them. My DH won them in a meat raffle and they've been in the freezer for ages. Got enough for two days so can do something different tomorrow too.

Well that's handy cos I have some garlic butter in the fridge that was left over from something else.

Excellent. Just off into the garden for herbs then.

OK have made a butter mix with garlic, marigold, black pepper and finely chopped fresh oregano, bay, sage, thyme and lemon balm and smeared it under the skins and put the breasts in the oven.

Well my DH and my friend who always comes round for his dinner on a Wednesday proclaimed this chicken absolutely delicious (I don't eat it myself) so thank you for the suggestions!
