What can I do with it folks, other than make another curry?
Any suggestions other than to freeze it?

you could have made coconut rice to go with the curry - too late now

Kidney beans (peas) or black eyed peas or gungo beans

cover with water (about an inch above). When the water is boiling pour in the coconut milk. Stir ONCE and pop an uncut chilli on top. When the holes appear the rice is cooked. Discard the chilli

the chilli only gives its flavour not it's heat if it isn't broken.
