What can I do with leftover roast pork

I hate having leftover roast pork, as I never, ever know what to do with it, apart from sarnies which my DH won't eat. Is there anything that can be done with it?

stir fry

Shred it along with spring onions and cucumber.
Have it in tortilla wraps with hoi-sin sauce.
(sort of like crispy duck from Chinese restaurants)

layer it in a casserole dish with sliced onions and sage, pour on any leftover gravy and/or make up some stock

peel and slice potatoes and layer on the top

bake in oven until potato is cooked.

Stir fry with noodles

use left over apple sauce (if you have it), lemon grass paste, ginger and coriander (I guess you need these things knocking about in your fridge).

We've just eaten up our leftovers tonight.
