Yes, I'd normally suggest five or six different things between two of you as a starting point.

I have never really seen tapas as a meal..

well, there are 8 of us, so how would we work that?

I went to a tapas place for the first time recently with 2 other friends - we ordered about 10 different dishes between us and that was just the right amount.

It was delicious - have fun!!!

They may do a set selection.

With eight of you, if you all like the same things, I'd suggest picking say ten or twelve things and ordering two of each, or seven or eight things and ordering three of each.

Or you might find that you like different things, have some vegetarians, some who don't like spicy stuff, etc., so might order a bunch of stuff that you can all agree on and then supplement with some more personal choices.
