Fondant icing

Can anyone please tell me how to make fondant icing that I can either pour onto a cake or roll out and then mould onto it?

I have found a variety of different recipes on the internet but I wondered if someone had a recipe that definitely WORKS! I don't have a candy thermometer and no access to getting one (I am in Thailand). The other recipes I have seen include raw egg whites....do you think that would be OK for a 4th birthday cake for lots of children?

Any advice greatly appreciated

This recipe from Delia Smith does work but it does contain egg white. It wouldn't worry me in the UK (perhaps I should be worried?), but you may have concerns in Thailand.
