another beetroot question

i've been given some beetroot by my grandfather and have decided to roast it with some potatoes 9as suggested on other beetroot thread) but just wanted to know...do you have to peel it first? and if so, is it messy?!!

No don't peel it - just wash the mud off. If you peel then first they'll 'bleed' everywhere. You can peel them once they're cooked. Try not to break the skin at all - i.e. leave the roots & the bottom of the stalks on too.
