Foolproof Meringues

I don't even know if that's how you spell it. I tried to make a big pavlova like nest. It looked okay on the outside but was very squishy on the inside and didn't have a crispy base either. Any of your great recipes would be lovely.

Go to shop
Buy pavlova base
Come home & fill it with yummy stuff
Pass it off as your own

Meringues (petunia's grandmas' recipe!)

2 egg whites
1 cup sugar
2 tbsp boiling water
pinch salt

Preheat oven to 100C.
Beat ingredients in bowl over pan boiling water until egg whites form peaks (think you have to do this for a good few minutes).
Line baking tray with greaseproof paper or foil. Grease with oil.
Use icecream server to make individual meringues or pipe onto tray for pavlova.
Bake for approx 1-1 1/2 hours.
Keep in warm place (Grandma uses her airing cupboard) until ready to use.

I think your pavlova that you made sounded nice! Some people like meringues that are solid (I think that's why Grandma kept them in her airing cupboard to dry them out even more) and some like them "squishy" in the middle!
