How long to boil a beetroot? Any recipe ideas

A friend just gave me a beetroot from her allotment. How long will it take to boil (I realise that this will depend on size) - is it, as I have heard, hours.

Also does anyone have any good recipes?

Just ONE beetroot?!!! I'd be interested to know some recipies too as my neighbour was wanting to give me some from his allotment and I had no clue what to do with them.

Beetroots are fantastic roasted - you just need to scrub the dirt off them, no pre-boiling needed. The warning is it will turn your wee red, which is something we omitted to tell 17yo nephew when he tried it. He thought he was dying, poor lamb.

for the wee ones (tennis ball size) I boil them for about 20 mins.

The roasting idea sounds yummy though!

I eat raw - grate (or use electric thingy until very small pieces if feeling lazy) and mix with balsamic vinegar dressing. refrigerate and eat. yummy and cleanses the liver.

you can also mix grated carrot with the beetroot which is equally nice.

I had my first roasted beetroot yesterday - it was lovely. It turned my poo red though...........
