For a variety of reasons, our shopping/cooking routine is all to pot.

I am starting to dread around 4:30 as there is nothing in the fridge and if there is I just feel daunted by the whole thing. Ridiculous I know!

So while I am on holiday, I need some sort of routine established again!

Need some quick and easy meals which all of us can eat (including 2 year old DS).

Please help!

Also:
home made pizza (you can make double quantity of bread dough and freeze half for another time), use whatever toppings you fancy, adapt for ds.
big bowl of tabouleh (couscous salad): couscous, tomatoes, onion, mint and parsley, olive oil, slat and pepper. Lasts for a few days.
Grilled meat and roast new potatoes salad (scrub pots, slice thickly, add some olive oil, herbs, salt and pepper, put in oven for 50 mn. Dress with french dressing and eat warm. Do a big one and keep some in the fridge to eat cold the next day.

Hi Spacemonkey, after reading this thread I'd like to get Real Fast Food, but there seems to be several editions out there... which one do you have or are they pretty much all the same? I've seen one from 2003 and some from 1996 and97...

I do the following once every couple of weeks:

brown some mince. add a tin of tomatoes. a big onion. 2 carrots. sweetcorn. mushrooms. simmer for about 30 - 45 minutes.

lovely with potatoes. I freeze what we dont eat in tubs. Then when we fancy some take a tub out to defrost over night in the frige and the reheat next dinner time. Ds loves this.

For a spagetti bolognasie - just leave out the veggies. For a chilli - leave out the veggies and add kidney beans and chilli sauce.

Great meal - and cheap.

Also chuck a load of veggies in a pan for 10 minutes, the serve covered in grated cheese. lovely!

Quick dinner is cooked spaghetti and toss in lemon juice,little bit of butter, grated cheese and fresh parsley (whizz the parsley in food processor or finely chop first). Takes as long as it takes pasta to cook to have dinner on the table. Really handy meal for the summer and yummy too.

Karen99 - was just looking for that Nigel Slater book and the Book People are doing a set of 8 cookbooks including his Real Fast Food and Real Fast Puddings for £9.99!! So I am going to get one! Just thought you might want to know as its quite cheap. Its just
