yes, you can, it's lovely.

don't need to parboil or peel.

just wrap it in foil, with a little olive oil and chuck it in the oven. a medium size one will want about an hour, maybe a bit more. the skin should peel off easily once they're cooked

sorry, that's for roasting them whole.

you can of course peel and chop them and chuck them in with other veg

You can also make them into crisps, they're delicious. Just slice really thinly, dry on kitchen towel , and fry in small batches.
