Broad Bean & Bacon Soup
New Covent Garden Food Co, Soup for all Seasons,
Serves 4 Cooking Time 35 mins
1 tablespoon Olive Oil
12 rashers of smoked, streaky bacon, cut into strips
12 Spring onions, roughly chopped
750 ml (26 fl oz) vegetable stock
500g (1 lb 2oz) broad beans
Salt and freshly ground black pepper
Heat the olive oil in a pan, add the bacon and spring onions, then cook for 8-10 mins until the bacon starts to crisp.
Add some of the stock to the pan and cook gently for a further 3 mins.
Add the broad beans and the remaining stock, then cook for 20 mins.
Blend until smooth.
Return to the pan, season to taske and serve..
