I cant be bothered to do a roast dinner, I'm bored with pasta and we've had lots of salads lately...I need inspiration for dinner please!

couscous with fresh herbs (basil/coriander/parsley is nice), a bit of pesto, red onion and peas mixed in it and melted cheese on top, with lovely roasted chunky vegetables (carrots/peppers/corn on cob/whatever) and simply grilled fish (or chicken)

we're having covent garden butternut squash soup and crusty bread. can't get much simplier than that! Dh is away, so only ds and I.

rice salad - nice nutyy brown rice and chopped up veg and fruit of whatever you fancy. stuff it all into pitta breads to serve. and add mayo if you like.
ideas to include
apple
cucumber
tomato
tuna
sweetcorn
avocado
spring onion
olives
capers
mushrooms

oh you get the gist...

Cod thing is v easy

cod steaks
prosciutto
olive oil
lemons
garlic
green beans

put green beans spread in large pan
wrap cod in prosc
cut up lemons into quarters, chuck in
break garlic into cloves, don't even take the skins off, chuck in
drizzle olive oil
cook 20 mins

easy and always gets compliments.

Mmmmmmmmm....I'm hungry now, these all sound like great ideas! If you've got time to go out, how about a big loaf of tiger bread to make doorstop sandwiches packed with yummy things!

A chilli with french bread is really quick to make.You can get tiger bread baguettes, I love tiger bread!!

Not sure I approve of cooking our cod! Place wouldn't be the same without her (and I'd feel a bit cannibalistic!!)

Sounds yummy though!

Also like the sound of Greeny's suggestion. May do that today!

i think nigell has a version of the cod in how to cook, if you have that ng. it's lovely with puy lentils.
i'm having this today.

Puy lentil salad also v easy

cook lentils
mix olive oil, lemon juice, thyme if you have it
add to lentils
add capers if you like
chillis if you like it hot
crumble feta over it

I haven't got a lot in, but I can nip to the shop that's no problem. I'm veering towards roast vegetables/garlic with 'something' atm.

Wouldn't it be lovely to be living with one of those tv chefs on days like this? (Well, it'd be nice to have one on hand every day actually.)

Roast vegs, peppers, onions, courgetts, fresh small toms etc
skewers with chicken with slices or above (oven cooked)
Spicy rice or couscous
Crusty bread.

Mellon for pud
or Stawberries & Cream
