Best Ever Carbonara sauce recipes please?

Got some great ideas from the tomato based question though I would try the carbonara sauce too!!

I don't really make carbonara sauce as such, just fry small pieces of bacon until crispy, add mushrooms, garlic, onion, pepper etc, cook spaghetti and add to the mixture, then stir in two beaten eggs and cook gently until egg has set. Add lots of black pepper.

I do much the same as Dinosaure, but with added creme fraiche.

Yes, or you can stick in some natural yogurt.

Oh, and lots of parmesan beaten in with the eggs.

2oz parmesan finely grated
2 eggs and one egg yolk
8oz pancetta cubed
2 garlic cloves crushed
75mls double cream
1 tbsp olive oil

fry pancetta until lightly golden, set aside
beat eggs with cream and parmesan, season
add garlic to pancetta and return to high heat for 1 min, meanwhile drain cooked spaghetti (14oz). Return spaghetti to pan but keep off the heat, pour egg mixture over pasta add pancetta and stir until its thickened. Voila!

4 XL eggs
½ cup parmesan cheese (grated)
½ cup pecorino cheese (grated)
8 oz. guanciale
1 garlic
Olive oil

Black pepper
