Wholesome but quick family meal ideas

I'm struggling to get a decent dinner on the table for dd who is 18 m that dh and I can eat as well. I can cook and know lots of recipes but need more ideas for quick things that I can pull together in 10-15 mins with a toddler fussing round my ankles for work nights.

We are vegetarian. So far I have omlette, pasta with tomato sauce, falafel (but what goes with them?), pizza, eggy bread.

Would welcome any ideas that incorporate vegetables please.

Don't eat Quorn, indigestible food of the Devil. Make tacos with kidney beans instead (fry onion and garlic in butter and oil, add kidney beans, smush up until cooked).

stir fry with noodles (chinese 5 spice / garlic / cook medium egg noodles in stock and you can make it more soupy)

Is fritata just a posh word for omlette? I have looked at a frittata recipe and it would appear to be the same thing.

When 'quiches' first started appearing in the mainstream shops in the eighties my mum used to shake her head and say "Quiche Loraine? pah - egg and bacon flan more like it!"

That just reminded me

Pasta with green sauce.

Green sauce is onion and garlic fried, add any green veg you have lying about + frozen peas + frozen spinach (if not already in fresh), add a little flour or cornflour, slowly add milk to cover, stirring all the time and cook until sauce is thick and veg are cooked. Then whizz in the blender and serve with the pasta and some grated cheese.

My kids love this and we're not vegetarian.
