Baked sweet potatoes.

I know these are suppoed to be a healthier alternative to the "normal" vaiety, but what fillings do you use. I usually do tuna and sweetcorn, ham and cheese etc but can't see these flvours working with the sweet variety. Any suggestions?

some sweet peppers (cooked) with chopped chiken and the cheese I cant spell but begins with M and goes on pizzas

Cottage cheese and chives. Chicken and spicy lemon mayo - anything to counterbalance the sweetness really.

Trying to avoid butter Carmenere. AIming to loose 2 stone by August for a wedding. Just had on with cottage cheese and chives (it was whilst eating it and thinking this combo isn't that great that made me wonder what else I could try.

Black olives, feta (marinated in crushed coriander seeds, fennel seeds, crushed garlic, olive oil and red chilli)and fresh coriander. The salty/sour flavour works really well with sweet potatoes.

That is reminded me to put it back on our weekly dinner menu.......

I have them with a big green salad and plenty of black pepper. Might have cottage cheese on the side. Don't tend to put anything on them as such. Love 'em!

Some good ideas here thankyou. Just googled and found a nice looking recipe with spicy/tomatoey chickpeas which looks good.

bake sweet potato like a normal baked potato, then cut in half, sprinkle some fresh chilli (or dried), dash of lemon juice, salt and pepper, torn mozzarella and fresh basil leaves.
The combination is just divine!! And dead quick too!!!
