What can I do with chicken breasts for dinner please?

I made homemade chicken in breadcrumbs with some last week so wanted something different. Was thinking pasta based but had pasta and potato dish yesterday. Any ideas? I also thought maye baking in some sort of sauce and serving with potatoes and veg, but am not sure.

stir fry with veg?
risotto?
bash them thin and flat with rolling pin, sprinkle on salt, pepper, lemon juice, oo, chilli flakes, then flashfry or griddle, and have with a nice salad?

Thanks, had thought about stir fry, think I might do that as it's nice and quick as well. Have 5 breasts to use up today or they go off so will no doubt have leftovers!

Smear with cranberry sauce or pesto, wrap in bacon or parma ham. Bake.

My two faves are:
stuffing them with feta and olives/herbs/whatever and baking in tomato puree/jar sauce.

Or frying garlic & onion, chuck in chicken til browned, add tablespoon of sugar, two tins of tomatoes, 1/2 glass of white wine and some basil. Simmer til done, and serve with couscous.

Yum.

Portuguese chicken:

Chicken breasts
Red onions (1 per person)
Chorizo
Rosemary
Paprika
Vine tomatoes (at least 8 cherry-sized tomatoes per person/chicken breast)
Wild rice
Olive oil
Coriander - chopped

Preheat oven to 220 °C.

Heat some olive oil in a frying pan on a medium high heat and sauté the red onions for about 3 minutes until soft.

Add the chorizo and sauté for a further minute; then add the paprika and mix in.

Place the chorizo and onion mix on a baking tray and set aside.

Add some more oil to the frying pan and sauté the chicken for 2 minutes on each side until browned.

Whilst the chicken is browning, place the rosemary in the baking tray on top of the onion and chorizo mix and quarter the tomatoes lengthways.

Once the chicken has browned place it in the baking tray on top of the rosemary and put the tomato quarters around the chicken.

Place the baking tray in the oven and roast for 25 minutes.

Serve with cooked rice and garnish with the chopped coriander.

All those sound nice will try wrapping in bacon another time, honey and orange sounds good too how is that made?

Bouj I like your second one but first is a no no as dh is allergic to olives. Have to say I won't be eating any of this myself as I'm a vegetarian, they do all sound very nice though.

I always omit the olives as dh hates them (goes to a lot of effort to make sure I know how much he hates them) and is stil yum. It's off our menu at the moment due to my 'diet to get into bridesmaids dress'. Feta is good but bad

1tbsp sunflower oil
4 spring onions
clove of garlic
3tbsp honey
4tbsp orange juice
1 orange

put chicken breasts in a oven dish

heat sunflower oil garlic and chopped spring onions in a suacepan when soft add orange juice and honey and orange segments until honey has dissolved

pour sauce over chicken and put in oven uncovered for about 40 mins

the chicken takes on a dark coating
I make more sauce than this states make some noodles and pour the extra sauce over the noodles

the kids love it !!!!!
