Salmon recipes

Anyone got good tips for a salmon recipe. I was thinking stir fry? Much appreciated.

we uaully just fry fillets in a griddle pan and scoff
or marinade and barbecue

it needs much, much less cooking than you think

been to Morrisons? LOL

I am having mine with pasta, cottage cheese, and cauliflower

We're having salmon tonight. This is my fave recipe for salmon:

Pan Fried Salmon, Tomatoes and Shallots with Balsamic Dressing

Serves 2

Ingredients:
1 clove garlic, crushed
5ml spoon sunflower oil
75g shallots, peeled and sliced (could use onions instead)
2 salmon fillets
125g cherry tomatoes
15ml spoon balsamic vinegar
½ x 15g pack fresh basil, roughly torn
fresh rocket

Method:

Heat the oil and gently sauté the garlic and shallots.

Add the salmon fillets and cook for approximately 15 minutes turning once. Add the tomatoes, balsamic vinegar and the torn basil leaves, continue to cook gently for about 4 minutes.

Serve the salmon, tomatoes and shallots on a bed of fresh rocket. Drizzle the pan juices over the fish.

nice marinade - brown sugar, soy sauce, olive oil and few flakes of red pepper/chilli flakes. can bake or grill, and use left over marinade for rice or drizzle on salad leaves. is equal amounts of all those ingredients

sometimes poach it too with some thai curry paste and coconut milk
