stuck in a rut

DS is 20 months and basically eats the same things again and again. Fruit, veg, oatcakes with dairylea, bagels/toast etc. And for main meals it's chicken nuggets (homemade) or fish fingers with oven potato wedges and veg. Or homemade pizza. We're totally stuck in a rut! The problem is that

  1. He isn't too keen to try out new things so I've been so diheartened in the past I've stopped trying! And have a freezer full of things I've made he won't eat!
  2. He won't eat anything with a spoon and won't be spoon fed - never has been. He's getting the idea of a fork but still prefers his hands so we need finger foods.
  3. He won't eat much dairy so milk based sauces are out. And saucy foods make his hands dirty which he hates
  4. DD came along 8 wks ago so we barely have time to cook anything at all for DS!

So I need recipe ideas. Quick, easy things that I can do or things I can make and freeze in advance and use at a moments notice. And that are fairly nutritious. Oh, and not too weird... he's used to meat & two veg lol.

try couscous - DS loved it at that age and you can add curry/tom sauce/whatever, we used to roll it in lettuce leaves sometimes. Or what about muffins with toasted cheese or eggs bendict type things
