What to do with polenta?

i must admit mn has got to my head, i bought a packet of quick and easy polenta a while back after seeing it mentioned on here but not sure what to do with it now.... i have some lovely veggie 'parmesan' from the farmers market now

or i have taken a liking to lemon polenta cake

you can make polenta cake - follow packet instruction then when it is solid, brush with olive oil and griddle it - will be yummy with roast veg and parmesan. Also you can use it to coat chicken breast etc

Watching this thread, I've never 'got' polenta, tried the whole grilling/frying thing, just end up with slightly crispy tasteless rubber. Probably nice in a lemony cake though, would assume it keeps well.

upside down pear and polenta cake

I've never made it but someone bought it to a dinner party and it was SO delicious (she served it with stem ginger ice cream and a stem ginger syrupy sauce)

Polenta mash (use instead of potatoes)

Orange and polenta biscuits - ala Jamie Oliver. Perfedt to go along side chocolate mouse/pot type desserts.

LOL, no never had polenta mash. Just saw it in a recipe book last week. It looked quite nice. Gather it isn't then?
