You can't go wrong with Delia IMO

I use the Delia recipe, but use 6 hard boiled eggs and I also add a lot of halved cherry toms. I like it with a dollop of mango chutney.

A bit late if you wanted it for tea last night but here is our recipe for Kedgeree - its very much a no-frills, quick mid-week supper version....

fry one chopped onion in a little butter until starting to go soft. Add 1-2 teaspoons of tumeric and stir. Add One mug of rinsed long grain rice and gently fry for one minute before adding sufficient water to cook the rice. Add seasoning whilst rice is cooking. Meanwhile hard boil and slice 2 eggs, cook haddock according to instructions (about 3 minutes in the microwave usually for ours) and then flake. also cook a couple of handfuls of peas. Once the rice is cooked mix everything together and serve.
