recipe for sweet corn casserole

Just wondering if anyone knows of a casserole recipe that uses sweet corn. No other veg. Im not sure what you call it. I guess its called corn casserole or something on that line. I just know its really sweet and yummy.

A Google search on Corn Casserole came up with loads but most seem to have other vegetables. Can't be bothered to type these as links and multiple ones don't work anyway...

Would Indian-style sweetcorn using sweetcorn kernels and pieces of corn on the cob be any good or would it be too spicy?

How about the old student standby of tuna & sweetcorn casserole?
Drain & flake 2 tins of tuna into a casserole dish.
Add 1 tin of sweetcorn.
Pour over 1 tin of mushroom soup.
Crusk a large packet of crisps & put on top.
Bung in a hot oven to warn through.

Mollipops- Is your soup like a mexican soup? Id love to try your recipe too.

Bettys - I will have to try your casserole since my husband does not eat much meat. He loves tuna.

Sorry for the delay - access to mumsnet has been a bit limited recently.

AS I said before, the recipe is more a guesstimate than a recipe so I hope you will tinker with it until you like the taste as much as we do! You may want to add sugar if the corn isn't very very sweet.

Indian sweetcorn

Ingredients

1 medium onion ? chopped
2 tablespoons of oil
1 level teaspoon of mustard seeds
1 hot green chilli or 1 teaspoon of chilli powder
1 tablespoon of roughly chopped peanuts
1 pint of creamed coconut
2 corn on the cobs broken into 2-3? pieces
1 tin creamed sweetcorn
1 tins drained sweetcorn
!.5 teaspoons of salt
1 lemon
1 tablespoon of tomato puree

Heat oil in heavy base pan.. Add mustard seeds and green chilli(if using), cover pan until mustard seeds have stopped popping and add chopped peanuts and stir while cooking for 20-30seconds. Add onions cook until the onions are clear then add the creamed sweetcorn and tinned sweetcorn, salt and chilli powder (if using) and about one pint of water and the corn on the cob pieces. Cover and leave to simmer until most of the liquid has gone and stir frequently to avoid catching and then add the tomato paste , coriander and coconut milk and simmer and add lemon juice (a bit at a time until you are happy with the taste).

Threeangels, the best thing about the dish is that it CANNOT be eaten without slurping and making a huge mess. You have to dip the cob bits into the sauce bit between each bite, so I hope your whole family enjoy it!

The chinese style chicken & swetcorn soup recipe I use is:

1 400g tin creamed sweetcorn (most supermarkets have it)
1 cooked chicken breast (I bake it in foil) or 4oz cooked chicken, chopped
bit of grated ginger root (about 1 qtr teaspoon)
2 egg whites
2 tbsp milk
1 tbsp cornflour mixed wth water to make a runny paste
1 pint chicken stock
couple of spring onions chopped fine.

Bring stock to boil. Mix chicken with ginger.Mix egg whites, cornflour paste & milk and stir well. Mix in chicken & ginger, and add to stock with sweetcorn. Heat gently, stirring (don't boil).

Serve straight away with chopped spring onions sprinkled on top. Yum.
