Help! Sauce to go with chicken wrapped in parma ham and spinach mash?

Parents are coming round for lunch and am cooking chicken breasts wrapped in parma ham with spinach mash and veg. Stuck for a sauce to go with it. Any ideas? It's got to be simple! TIA!

Either smoked or unsmoked garlic gently fried on the pan, then add a little double cream at the end and maybe a dash of white wine.
