what do i do with it all? anyone any ideas?

Wash it and chop it up. Then pack it into an ice-cube tray and top up with water. Keep it in the freezer and you can just pop it into soups, casseroles etc when you need it.

I was going to say make parsley sauce for fish and freeze it, but bran's idea is probably better.

i don't even do the ice-cube tray thing, i'd just wash it, chop it and then put it into a bag as flat as you can make it, until it freezes.

does it stay green if you freeze it ? was worried it would burn and go brown.

it's fine, i do this with corander and parsley. just try and have it as dry as possible and as flat as possible so that it doesn't all freeze into a clump. i keep the roots and stalks separately as they're good to sling into stock.

just freeze it as is , it stays same make some bread crumbs with stale bread add loadsa chopped parsley then freeze always nice to top bakes and pasta
