Veg box query again......squash. Can I casserole it?

That is it really. I am doing beef casserole in the slow cooker tomorrow. I have established I can put my beautiful purple kale in but will the green squash / pumpkin things I have casserole too???

well, it always goes mushy for me. but that's ok because we need plenty of soup.

I often put squash in my casserole. It does go more mushy than other veggies IME - I don't particularly mind though. You could add it part way through cooking to try and avoid that I guess.

fry some onion and garlic in oil (I use olive oil but that's because it's 3p a bottle here).

chop up squash and add to onions. add a potato if you fancy thicker soup.

add a handful of red lentils

add enough good chicken stock to cover (or veg stock if you must), and a stick of celery if you have one.

add half a teaspoon or so of ground coriander (the spice) and/or cumin, plus salt and pepper (if the stock isn't too salty that is)

cook for half an hour or so, then remove the celery and whizz.

(thisis a very flexible recipe. secret is good stock and lentils)

Senora - Thank you. I have all those ingredients. I am going to do one and a half squashes in the soup and half in the casserole. The children will be having the casserole so mushy is good for them anyway.
