roast carrots?!?

I have courgettes, sweet potatoes and red onion which i was going to roast, can i add the carrot?? any tips?

If you do, you will need to either cut the carrot quite thinly or put the carrots in a good half hour before the rest.

I often do roast carrots for my dses. I chop them up into cubes (my dses are 2 and 1) along with parsnips, sweet potato and potato and roast it all for about 40 mins.

DH put the carrots in with the roast recently instead of steaming them, 2 of my DS's refused to eat them because they apparently tasted like sweet potato. The rest of us loved them. Worth a try...
