Ok, so far have only thought of casseroles stuffed with veg and baked potatoes.
Anyone got any ideas, going shopping soon !

here we like couscous with veg bouillon in cooking water then loads of things like dried apricots, raisins,peppers , lime juice, seeds and nuts etc anything thats in cupboard. good by itself or as side to chicken or lamb.
and i am fan of thousand and one ways with mince....meatballs, all standards. if you eat meat that is.
omelettes/spanish omelette v. cheap and cheerful. i could go on...

From The Pauper's Cookbook, so nice and cheap then
Bacon onion and potato hotpot (B.O.P in our house) chop an onion,.snip bacon into bite sized pieces, peel pots and cut into v thin slices, IN a casserole dish do a layer of bacon, one of onion and then top with layer of pots; repeat x2.Make up a white sauce, eason w/pepper and nutmeg, pour over. Bake in oven at c150 for about an hour, w/lid off. V tasty!
