Nigella's cupcakes

Simply cut off the 'hump' and add your beautiful pastel lilac coloured icing - except when cutting off the hump whole cake kind of squashes and then icing looks shite cos cupcakes no longer round. hmmm. Anyone managed to do these properly? could be cos cakes had really crusty tops due perhaps to dairy/egg free recipe. Sorry in mad mode as have dd's 1st birthday tomorrow..

I wouldn't cut too much off the top. Keep them firm by adding a little milk and an extra pinch of baking powder. Remember to have all ingredients warmish.

Hmmm, I haven't had a problem cutting the humps off. Silly question but are you using a sharp cutting knife rather than a butter spreading/dinner eating knife?

Secret is to not fill cake cases too much before baking. Cup cakes are therefore small and you can ice very thickly to the top of the case making them appear flat, which is what I've seen Nigella say on her TV programmes. If you've already made them then I think you just have to chop the tops off.

I did think my knife was sharp but you could be right, will get dh to sharpen it tomorrow when I ice the other batch - I'm such a saddo that I made extras so I could do a practice ice tonight!
