Help me make a pork stir fry

I'm OK at cooking most things, but never seem to get stir frys right. The ingredients I want to use are:

Pork
Red pepper (optional)
Purple sprouting broccoli spears
Beansprouts (optional)

I have chillies, garlic, and lots of different seasonings and spices. I'd like to serve it with noodles (can be egg, pad thai or rice noodles). The bit I don't get is which spices to use. I generally add too much of too many different things and it tastes odd.

Does anyone have a fab recipe?

I use sesame oil to fry the meat and veg in, then add honey and lots of soy sauce. I might put a bit of ginger and chilli in to give more flavour but anything else seems to be too much.

I made this last night, it was yum...

fry the pork and some chili in some oil and 1 tbsp honey then set aside.

Add veg and some garlic to pan and cook a few mins, then add 4 tbsp white wine vinegar, 2 tbsp soy sauce and 2 tbsp honey.

Boil a few mins to reduce, then put pork back in and it's done!

Actually, I put cashews in at the end too which was nice

Bubblemummy - how many people were you cooking for? I'm only making it for one (although I am very greedy), so think I'd need to use less w.w. vinegar, honey etc?

Yes, that was two large portions so I'd use about half.

It turned out reasonably well. I'd probably use a little less white wine vinegar next time, but I guess that's a matter of personal taste.

I'm glad you enjoyed it. Am going to make the same tonight but with chicken instead of pork.
