Dh has asked his boss and wife (nice people, no stress) over for supper on Friday night. What shallwe make? A fishy something, he said and went back to his work! Any inspiration for fishy somethings?

Fish pie???

salmon risotto?

i love Jamie Oliver's fish pie but it takes ages. Risotto sounds great, do you know where can i find a recipe, please?

Scallops quickly fried in butter and garlic
followed by
Baked trout (wrap in foil with thin slices onion, tomato, parsley, squeeze lemon bake about 30 min gas 6)
followed by
Pudding

yum! thanks

matchstick thin strips of courgette, carrot and celery. placed in a baking parchment parcel. put a piece of salmon on top. pour in a dash of white wine, rice wine vinegar, soy sauce, lime, coriander, a pinch of ginger and a niblet of lemon grass and some salt. bake for twenty or so mins at 180 (160 for a fan). open and melt with delight at the delicious smell that will hit you then serve as is on a plate with the additional veg of your choice (although i dont find this necessary!) yum yum.
