Bulla cake is a very popular Jamaican pastry and it is delicious. You can buy it in shops selling West Indian food or make it (I found this recipe on the internet). Once tasted, never forgotten.

INGREDIENTS:

  • 2 3/4 cups brown sugar
  • 1/2 tablespoon salt
  • 2 cups + likle bit of water
  • 1 cup margarine
  • 2 tablespoon ginger
  • 2 tablespoon vanilla
  • 7-1/2 cups flour
  • 3 tablespoon baking powder
  • 1/2 tablespoon baking soda
  • 1 teaspoon nutmeg
  • Flour for rolling out bulla
  • 1/2 teaspoon cinnamon

METHOD:

  1. Melt butter, set aside for a minute, meanwhile add water to sugar to form a syrup, only add enough water to saturate the sugar.
  1. Combine all the dry ingredients with a wooden spoon, making a well in the middle; add syrup and butter and slowly fold together to form a dough.
  1. Flour a board and knead for 5 mins, roll out into 1/8 inch thick, cut dough into 4 inch circles, place on a greased baking sheet in a pre-heated oven, (350 degrees).
  1. Bake for 25 mins or until bullas rise.
  1. This is a basic Bulla cake recipe. You can add other ingriedients like ginger root or chocolate.
