Smoked mackerel - anyone got any pasta/rice type ideas that don't take too long.

DH on guard, not in until after 7. I have some smoked mackerel in the fridge, he loves that, but i would like a pasta or rice recipe that i can make him that won't take too long, as I don't want to be in the kitchen late. The DS s and I had cheese on toast we were out for a bar lunch today.
I also have salad, peppers, sp onions, etc

Saltire, we normally flake the mackerel and then add sweetcorn, peppers, mushrooms, spring onions etc to the pasta and either throw in a pasta sauce or stir in a spoonful or two of mayonnaise (sp?)an easy and quick standby in my house and goes down well with kids or adults! So saying we're having delivery pizza tonight so it doesn't come quicker than that! Hope he's cooking your dinner for you tomorrow Happy Mothers Day! Beksmum

Chance would be a fine thing beksmum, he is on day 2 of a 7 day guard shift - 12 hours a day! I had planned to get a take away as it's mother's day tomorrow and his birthdya and he will be later in tomorrow! But we had one on Thursday night and i don't think i can justify two in one week.
I shall cook up the pasta and add the mackerel and peppers, hope you have a nice day tomorrow
