I was going to say goats cheese melted on baguette slices under the grill on salad (from bag) sprinkled with balsamic vinegar. How easy is that?

Recently did a recipe exchange with some friends and got this one back ? it?s for 6 but you can adapt it to 4. Here you go!

Delicious haddock starters - for 6.

I use bottom right hand of Aga ... about 180 degrees

Cook spinach in microwave as per instructions on bag! Squeeze out as much
liquid as possible. Roughly chop the spinach and season well, then divide
between 6 ramekins. Cut the smoked haddock into chunks and place on top of
the spinach, then season with pepper.

Mix the double cream (150ml) and mustard (1 tablespoon) together and spoon
over the smoked haddock. Scatter some grated cheese on the top of each dish
and then place on a baking sheet and bake for 20 minutes (check after 15),
until bubbling and golden brown on top. Serve with some salad dressed with
lemon juice to cut through the richness of the cream sauce.

thanks so much - they all sound delicious - and MamaG the mozarella and tom is not chav - just yum ! will have a think now....
