Wheat free cakes or biscuits - help needed

I have to make a cake for a meeting at work tomorrow (we have a monthly bake off!) was making my trusted apple cake but just found out one of the team does noteat wheat!! Any recipe ideas appreciated, might go for the apple cake and then make an extra

buy some doves farm wheat free flour and do the brownie recipe on the side of the packet - it is really good.

There is a nigella recipe for clemantine cake which is FAB. Uses ground almonds and clemantines, and is really moist and lovely. You just need to get gluten free baking powder to make it completely friendly. Want me to dig it out?

Even the plain Nigella one (the 'party cake' from How to Eat, same deal but no clementines) is pretty good with fruit coulis or glacé icing made with orange juice.

Or pavlova is a good bet - I did one for my mum's birthday with discs of meringue sandwiched together with whipped cream, and chocolate sauce (like you'd use for profiteroles) poured over the top - huge success.

I agree with the Doves Farm flour suggestion. It's good stuff.

I also have a fab rich chocolate torte recipe which is made with fine ground polena if you would like.

I know the ground almond one too. Mmmmmm.

(I'm just begining to realise I have an unhealthy knowlege of baking and puddings in all shapes and sizes. )
