Quick, what can I make for DC for dinner?? I have lots of leftover chicken??

Just spent 2 hours on MN when I should have been cooking a chicken and potato bake for dinner...it takes 1.5 hr to cook!! Now I dont know what to do with all the leftover chicken... havent got any rice so cant do a rissoto....what shall I make??? EEEEK!! My boys are hungry!!

you got any noodles .. like egg noodles

if you have

fry up the leftover chicken with some garlic and chinese 5 spice (if you have) .. add some veg (brocolli / carrots whatever)

at same time boil the noodles in stock .. takes about 4 minutes

mix one into the other

voila noodles with chicken

chicken and pasta?

got any creme fraiche or cream or coconut milk

cook some pasta (like fusilli or similar)

heat chicken in a big pan ..(if you have bacon or ham or onion fry this off first) add any veg you have .. add garlic and some mixed herbs .. when hot and pasta ready stir in the creme fraiche (or alternative) then stir in pasta ..

could add tin tomatoes before creme fraiche

DH would choke if I offered him a sandwich for dinner!!
Pants, used up our noodles.

Havent got a curry sauce, been trying to plan my dinners and cook to save money, doesnt help when I spend 2 hours on MN!!!!

I think I might nip next door to my dads and see what he has in his cupboard, he is never home during the week, yet buys lots of lovely stuff and it sits in his fridge!!

You need one of the famous MN menu planners. Mellowma was sending the out last I looked and recipients were making a £1 donation to the British Heart Foundation as it was originally YorkieGirl's planner.

I'd forgotten all about the creme fraiche and pasta thing. Thanks for that Twiggy.

Oh I have had one of those, and I did do a meal plan for this week, only I spent too long on mN and the meal I was gonna cook taks an hour and a half in the oven, kids wouldnt eat till 8pm!!!

ooo I saw your post about websites, and looked at yours. You must have the most lovely job, I am thinking about training to be a midwife. I was midwife led through my last baby and knowing the lady who delivered my boy made it so much better. You are really doing a fab job that makes a huge diff to such a special day!!!!

don't u have spices? Stick in in with spices, oinions and a pot of natural yoghurt and you've got chicken korma!

fry some onions, chuck in the chicken, any spices you have, like chilli powder, turmeric, cinimon, cardomom pods, coriander, ginger and garlic, pour over a tin of tomatos and heat through.

OK this is what I'd do

peel some potatoes and chop them up small (like 1 inch cubes)

stick on a baking tray and drizzle on oil and garlic powder ..stir them

stick them in a hot oven for about 25 minutes turning half-way through

after they've been cooking for about 15 minutes add the chicken so that it heats through

make some veg

and serve as a kind of chicken and potato hash with veg

ohh, pizza chicken - we normally do this with breasts, but its chicken layered with cheese and veg. I usually use courgette, onion, tomato, aubergine, mushrooms, etc.

Well I tried to make a pasta sauce with the chicken, I fried some onions and put in the chicken and added a tin of condensed chicken soup some white wine, lemon and mustard and taragon....when I tasted it, it was grose!!
Just got back from budgens with 2 micro macaroni cheeses for DC and a pasta sauce for me and DH.
