Leek and potato soup.

Cook the leeks then scoop out the inside of jacket potatoes, mix with the leeks and lots of grated cheese, pile back into the skins and bake again until it all goes brown and crispy. Lovely.

Leek and cheese pie.
Chop leeks into chunks, put in a saucepan and just cover with water, adding a little salt.
After 10 mins, drain and add a couple of beaten eggs and some handfuls of cheese - whatever you like - I use cheddar / gruyere type cheese and some black pepper. Maybe a touch of creme fraiche but not much.
Put in a quiche dish in which you have already started to bake some shortcrust pastry, then cover with the rest of the pastry.
Brush with milk / beaten egg and bake at 190 ish for 30 mins.
Serve with salad or whatever you fancy.

I make a lower fat version of the leek, bacon and cheese with leeks, ham and garlic just poached in a little milk. It cooks down all mushy and is delicious with pasta.

slice, put in baking dish, cover with a good glug of olive oil rock salt and lots of parmesan shavings and bake for 30 - 40 mins, splash of white wine if you have any open!

Also like chicken and leek pie but this involves a white sauce, so is a bit stodgy unless you are in the mood.

Here goes:- Leek, potato and bacon bake. 900g potatoes, thinly sliced 2 leeks, trimmed and thickly sliced 225g bacon, cooked and chopped 1 pint of cheese sauce 2tbsp breadcrumbs and 40g cheese for topping Boil potatoes in water for 4 minutes, then add the leeks for 1 minute.Drain. Pour into a large ovenproof dish with the bacon and mix well. Pour over the cheese sauce - either made or bought. Sprinkle with breadcrumb and cheese mix and cook for 45mins 200c, gas 6.

1 leek and 1 courgette per person. Thinly slice both(in magimix easiest). Cook in some butter, in a saucepan with the lid on. Meanwhile cook some pasta shapes. When the pasta is nearly done, mix a boursin cheese into the veg, add a pinch of salt and a generous amount of black pepper. Mix the veg mix with the pasta. Everyone always wants seconds!
