I think that is an oxymoron

you could possibly do something with honey but it would still contain sugar and not be very cakey

The only way you are going to get a sugar free cake is to use sweetener really (if you wanted a sweet cake) and then you get an aftertaste and I suppose sugar is healthier in this instance. Is it for a diabetic.

Does it have to be completely sugar free or just free of normal sugar? DS gets hyperactive on normal sugar but he can eat fructose with no problems so I make cakes and bicuits with that.

It's not for any particular health reasons, just that dd has not yet had sugar and I'd like to keep it that way for as long as possible - also trying to eat a bit healthier myself! I've seen some american recipes that use fruit juice concentrate but not sure if you can get it here?
