What can I do with 8 egg yolks?

Have just made a couple of pavlovas and find myself with 8 yolks. Would appreciate some suggestions as to what I can do with them.
Also can they be frozen?

Ooohhh hope someone comes up with some good ideas as I have to make a Pavlova tomorrow and willa lso have lots of yolks left - usually I throw them away!!

Adult-only chocolate mousse:

Melt bitter chocolate and cream very gently together. Meanwhile slowly beat caster sugar tablespoon by tablespoon into egg yolks and vanilla until all pale and creamy. Add liqueur of choice to chocolate mixture, stirring well. Gently fold chocolate mixture into egg mixture. Pour into individual cups and fridge overnight until set. Enjoy...

Unfortunately I can't remember the quantities, the recipe is at my mum's, and she is in Alaska.

Yes you can freeze them. Make sure you mark how many they are and freeze them in quantities you can use.

prettycandles - Have dug out an old recipe for choc mousse (From my MIL) which I had forgotten about - great idea. I can make & then freeze.

Knew you'd all come up with great ideas.

Why has no-one said creme brulee? My fave dessert. I'm always left with egg whites that I throw away. You need egg yolks and cream and a bit of cornflour i think - see Delia for the recipe but don't do that melting of the sugar in the pan for the caramel top; just throw some sugar on it and stick under the grill (only works with a gas grill tho).
