I want to take hardboiled eggs to work tomorrow sliced in a sandwish.

Whats the best way to do them, can I cook them tonight and make the sarnie in the morning or not?

I would.

make sure that when they're cooked, you cool them with cold water immediately, or you'll get that horrible grey/green ring round the yellow bit.

Yep cook them tonight, cool quickly in cold running water with shell on, store in fridge and peel for your sarnie tomorrow morning. Has always worked for me!
