Serve with mango chutney and apricot jam. Sounds sickly but is sooooo delicious.

I couldn't be arsed in the end so just breadcrumbed them and served them with jacket spuds and veg. The mango chutney sounds good. Not sure I could use apricot jam ! Thanks for your reply though nab.

For future reference Kbear, brush your chicken breasts in olive oil and then brush with red pesto, then cook in oven at Gas6 for 25 minutes or until cooked properly (as some ovens are more difficult than others!)

Cut a little pocket in them and stuff with boirson (garlic cream cheese), then wrap in bacon (not smoked, too salty) and secure with a cocktail stick

Cut into strips, marinate in lemon juice, olive oil, garlic and salt and pepper for at least 1/2 hr then thread onto bamboo skewers and grill (strips work better because chunks tend to swing around when you turn the skewers) serve in pitta with hummous or mayo and salad.

I just made rather yummy chicken curry with ours though
