Soup recipes wanted please.

Would especially like a french onion soup recipe,meat ones for the dc and vege for me
Oh and must be piss easy to make!

Posted this last week, nice veggy one. It is 4oz red lentils, boiled in water for 15mins. Fry chopped onion until soft then add 1lb diced normal pots & 1lb diced sweet pots also garlic and 2 tabs of curry paste (I have used Patax Madras and Patax Jalfrasy sp?, have got Patax Korma to try for next time) depending how spicy you like it. Fry all of that together for a further 5 mins or so then add 2 pints veg stock and cook for about 15 mins. When cooked add lentils to it and blitz it all together. Really nice.

Onion soup

Finely slice onions, and fry in butter on a low heat for about 30 mins until caramelised. Use beef stock, add boquet garni white wine and 2teaspoons of sugar, plus 2 garlic cloves (crushed) and the cooked onions. Simmer for 30 mins. Meanwhile slice a baguette (1 inch thick rounds) and toast in the oven. Top with grated guyere cheese and return to oven until melted. Dish soup into warmed bowls, top with 3 slices of baguette and spinkle a bit more grated cheese over the top.

Jerusalem artichoke soup
Leek and potato
Brocoli and stilton
Pumpkin soup
Various different squash soups
General veg soup
(Can also add things like lentils/beans/barley etc)
Chunky veg chille soup

As I said on the other thread if you google you will find millions, the combinations are endless.

When my dd was not eating much I found a bowl of soup was an excellent way to get food into her. A basic chicken and veg soup with potato was a meal in a bowl.

Carrot & coriander
1lb carrots
1 large onion
a small potatoe
a large cooking apple
2oz marg
2pt veg stock
bunch coriander
cream 1/4 pt

chop & sautee veg & apple, add stock. Simmer for 30mins.
Cool, blend. To serve reheat add chopped coriander and cream.

I can't give you any recipes sorry. I don't use them. Soup gets made from whatever I've got - but it will contain some form of protein, some veg and some stock. I made chicken soup last night from the chicken carcase from sat dinner, some red onions and acorn squash. If you are interested you just place the carcase (you can use chicken portions I suppose) in a large pan with loads of water, bring to the boil and simmer for about an hour. Allow to cool and then pick bones, skin and other undesirables out of the stock, then put stock and meat back in the pan with chopped veg. Simmer for a while and then stick in the blender. Add salt, pepper, stock cubes or whatever you like after you've tasted it. You can also make a nice soup from tomatoes, lentils, ham stock and chillies.

Bean and Barley soup

1 cup dried Butter Beans
1 cup Pearl Barley
2 onions
2 Carrots
1 Parsnip
1 Potato
1l Chicken or veg stock
Bunch of parsley

Soak barley and beans overnight
Remove outer skin of butter beans
Blitz veg in a food processor put in pan with stock
Bring to boil
Blitz potato
Turn pan to simmer
Add Beans, Barley, Potato and parsley
Leave to simmer gently until lovely and gloopy (the butter beans will melt) Sir occasionaly to stop it sticking to bottom of pan
Blend the lumps out

Scoff!

It freezes well too

Italian Bean Soup (made for me by a friend)

1 Onion
2 cloves Garlic
1 Potato
1 tin Borlotti Beans
1 tin Canellini Beans
Veg stock
Bunch of basil

Dice onion and crush garlic and sweat in pan
Dice potato and add to pan to sweat
Add stock
Add beans
simmer till soupy
Add seasoning and chopped basil

Off to make it now

BTW Once the beans are in and it's back to the boil return to simmer and you need to add small pasta (spagetti broken up small or farfellini) to help it thicken.
You might like to crush half the beans and keep half whole before you add them

Very easy vietnamese rice noodle soup

Broth:
2 pints water
2 beef stock cubes
1 onion
3 cloves
3 pods cardamon
1 stick cinamon
3 star anise
Simmer gently 15minutes and leave 15 minutes to infuse flavors

when you ready to eat:

pour boiling water over rice stick noodles to soften (no more than 5 minutes), drain and rinse in cold water.
Reheat stock

  1. put one helping noodles in big bowl
  2. sprinkle with thinly sliced steak
  3. add handfull beansprouts
  4. add coriander leaves
  5. pour boiling stock to cover
  6. rest 2 minutes to allow meat to cook
  7. enjoy with a dash of soy sauce

Courgette Soup
1lb courgettes
1 medium onion
1 oz butter
1.5 pints hot vegetable or chicken stock
Salt and Pepper to taste

Slice courgettes, chop onion. Cook in butter until softened. Add stock and simmer for 20 minutes. Liquidise and add salt/pepper to taste.
Very easy, very tasty

Honey and Parsnip soup

Put peeled, cored parsnips into a roasting dish with a clove of chopped garlic and a tbsp of honey, roast until soft - be careful it will burn! puree with veg/chicken stock and stir in creme fraiche / cream - depending on how fattening you want them to be
