Veggie leftovers

Looking for ideas for things that do well in tuperwares for DH's lunches - he hates sandwiches and looks forward to a microwaved tuperware of last night's tea for his lunch the next day at work (or so he tells me!).

I try to do this a few times a week and its usually things like curry, quorn chili & rice, bean & veg stew etc.

Do any of you do similar things for next day lunches? Any ideas gratefully received. Doesn't have to be veggie - I can adapt and substitute for things we do eat.

DP has had lasagne and shepherds pie this week. (The lasagne works in the microwave if you pre cook it)

He wants pasta but my attempts at reheatable pasta have not been godd. I will watch this with interest.

Spanish omelette is even better cold the next day.

I often take leftovers of veggie chilli, cous cous, curry and rice etc. Baked potatoes with ratatouille or cauliflower cheese aren't bad microwaved the next day either; certainly better than our work's canteen anyway!

Thanks for the ideas. Tbh I hadn't thought about baked potato. Shame DH hates eggy things because the omlette idea is good.
