your perfect sponge recipes please

ok so me speaking before i think have offered to make my brother a cake for his 21st next week. he wants a sponge cake andthe design of his fish tank which is fine as my imagination is quite good for things like that but the last few times i made sponge cakes it either didnt rise properly or rose wonky

i enjoy baking and still dont know why they didnt rise properly so my question to you all is

does anyone have a recipe for the perfect cake that i can make my baby bro for his birthday

I don't know why your cakes didn't rise, but my recipe is 6 oz sugar and 6 oz butter/cake margarine (like Stork) - beat together til pale, beat in 3 eggs adding a little flour each time and then fold in rest of flour (6 oz self-raising flour in all). I add a tsp of baking powder to the flour even though I use self-raising flour. Divide mixture between two greased and lined 8 inch tins and bake for 20-25 mins at 180 (160 fan oven). I have never had any problems with this recipe - hope that helps!

oo thanks. i think the ones i did before didnt use marg or butter as it was called a "fatless sponge"

will try that out

I use the same recipe as Californication only without the baking powder. use 4, 4, 4 and 2 for a slightly smaller cake

Oh - and as for wonky rising - you oven may have "hot spots" where it's not heating evenly. I have a similar problem
